Positioned along the vibrant river promenade of Southbank, Melbourne, Pure South Dining had the opportunity to expand into the tenancy above, and engaged Hedger Constructions to deliver a complete transformation—elevating both capacity and experience through thoughtful design and execution.

The project began with a full demolition of the existing spaces across both levels, creating a blank canvas for a cohesive, ground-up fit-out. Central to the brief was the integration of the riverside atmosphere into the first-floor dining experience. The result is an open-plan layout that embraces the energy of the promenade, with fluid spatial planning and carefully positioned openings that draw light, movement and views into the interior.

Above, the second level offers a distinct yet complementary experience. Designed as a more intimate, fine dining setting, this space capitalises on elevated views of the Melbourne skyline while maintaining a sense of warmth and enclosure. The transition between levels has been carefully considered, allowing guests to experience a subtle shift in mood—from the vibrancy of the lower floor to the quieter sophistication above.

Materiality plays a defining role throughout the venue. Inspired by the restaurant’s commitment to showcasing Tasmanian produce, the interior palette is grounded in natural, earthy tones and tactile finishes. Timber elements, stone surfaces and muted colours work together to create a sense of authenticity and connection to origin, reinforcing the philosophy behind the menu. These choices not only establish a strong visual identity, but also contribute to a cohesive and immersive dining environment.

Detailing and craftsmanship are evident across all aspects of the fit-out, from custom joinery and bar areas through to lighting and spatial flow. Each element has been carefully resolved to balance durability with refinement, ensuring the venue performs efficiently while maintaining a high-end aesthetic.

The completed project is a sophisticated hospitality space that maximises its prominent Southbank location while delivering a layered and memorable dining experience. Through a collaborative and detail-driven approach, Hedger Constructions has transformed the venue into a destination that seamlessly blends context, concept and contemporary design.
